Lemon Scallops

Ingredients:

  1. 1 tablespoons - coconut oil
  2. 2 pounds - sea scallops cut in pieces
  3. 3/4 teaspoons - sea salt
  4. 1/2 teaspoons - freshly ground black pepper
  5. 1 tablespoons - butter
  6. 1 teaspoons - minced garlic
  7. 1/4 cups - yellow onion finely minced
  8. 1 cups - dry white wine
  9. 2 tablespoons - fresh lemon juice
  10. 1 tablespoons - chopped flat-leaf parsley

Directions:

In the INSPIRE 11" GOURMET SKILLET (ITEM # 4981), heat coconut oil over medium heat for 2 minutes. Add scallops and sprinkle with salt and pepper. Sauté 2 minutes per side.
Remove from pan and set aside.
In the same pan, melt butter. Add the garlic and the shallots and sauté for about 1 minute. Add wine and cook for 2 minutes more. Return the scallops to the pan and toss to coat.
Remove from heat and add the lemon juice and parsley and serve immediately.
