Lemon Merangue Pie

Ingredients:

  1. 1 - pie crust
  2. 1 1/2 cups - sugar
  3. 1/3 cups - corn starch
  4. 1 1/2 cups - water
  5. 3 - egg yolks slightly beaten
  6. 3 tablespoons - butter
  7. 1/4 cups - lemon juice
  8. 1 tablespoons - grated lemon peel
  9. 3 - egg whites
  10. 1/4 cups - sugar

Directions:

Over heat mix sugar and starch, slowly stir in water until it gets thick and boils. Boil one minute. Stir half of mixture into egg yolk. Put mixture back into saucepan. Boil one minute more, stirring constantly. Take off heat and stir in butter, juice and rind. Pour into crust. Beat egg white until foamy and gradually add sugar. Pour on top of lemon filling. Bake at 400 for 8-10 minutes.
