Ingredients:
- 6 tablespoons - distilled white vinegar
- 1/2 - poached turkey breast
- 3 tablespoons - fresh lemon juice
- 1 1/2 teaspoons - balsamic vinegar
- 1/2 cups - olive oil
- - zest from 1 lemon
- 1/3 cups - golden raisins soaked in boiling water for 5 minutes; drained
- 2 tablespoons - capers
- 1 tablespoons - chopped parsley
- 1 tablespoons - chopped mint leaves
- 3 tablespoons - pine nuts toasted
- 1 - large (5-6 pounds) turkey breast
- 1 - large onion
- 3 - carrots chopped
- 2 - bay leaves
- 1 teaspoons - whole black peppercorns
Directions:
To Poach Turkey Breast:
In a large pot, cover turkey breast with cold water, then remove turkey breast. Add remaining ingredients (onion, carrots, bay leaves, peppercorns and vinegar) and bring to a boil.
Add turkey breast; simmer for 1 hour and 15 minutes. Let turkey cool in liquid for 30 minutes. Drain.
For Lemon-Marinated Turkey:
Whisk together the lemon juice and vinegar with some salt and pepper; add oil, whisking in a stream. Stir in the zest, raisins and capers.
Pour over turkey placed in small bowl. Chill overnight.
To serve: Cut turkey on diagonal; arrange slices on a platter. Stir parsley and mint into dressing and pour over turkey slices. Sprinkle with pine nuts.
