Ingredients:
- 3 tablespoons - olive oil
- 1 cups - long-grain white rice
- 1 cups - finely diced celery
- 1 cups - finely diced onion
- 1 cloves - garlic pressed
- 1 3/4 cups - chicken stock
- 2 tablespoons - fresh lemon juice
- 2 tablespoons - butter
- 1/4 cups - minced fresh dill
- 1 tablespoons - sugar
- 1/2 teaspoons - salt
- 1/4 teaspoons - pepper
- 5 - lemon slices
- - sprigs of dill for garnish
Directions:
In a casserole, cook rice in oil until brown.
Add celery, onion and garlic. Cook for 3 minutes.
Add chicken stock, lemon juice, butter, dill, sugar, salt and pepper. Bring to a boil, then reduce heat.
Place lemon slices on top, cover and cook for 20 minutes or until juice is absorbed. Garnish with dill.
