Lemon Dill Rice

Ingredients:

  1. 3 tablespoons - olive oil
  2. 1 cups - long-grain white rice
  3. 1 cups - finely diced celery
  4. 1 cups - finely diced onion
  5. 1 cloves - garlic pressed
  6. 1 3/4 cups - chicken stock
  7. 2 tablespoons - fresh lemon juice
  8. 2 tablespoons - butter
  9. 1/4 cups - minced fresh dill
  10. 1 tablespoons - sugar
  11. 1/2 teaspoons - salt
  12. 1/4 teaspoons - pepper
  13. 5 - lemon slices
  14. - sprigs of dill for garnish

Directions:

In a casserole, cook rice in oil until brown.

Add celery, onion and garlic. Cook for 3 minutes.

Add chicken stock, lemon juice, butter, dill, sugar, salt and pepper. Bring to a boil, then reduce heat.

Place lemon slices on top, cover and cook for 20 minutes or until juice is absorbed. Garnish with dill.
