Lemon Date Muffins

Ingredients:

  1. 6 tablespoons - Margarine
  2. 1/2 cups - Brown sugar
  3. 5 tablespoons - Lemon juice
  4. 1/4 cups - Corn syrup
  5. 1 1/2 teaspoons - Baking powder
  6. 1/2 teaspoons - Baking soda
  7. 1/2 cups - Sour cream
  8. 1 - Egg
  9. 1 3/4 cups - Flour
  10. 1 cups - Dates chopped
  11. 1/4 cups - Hot water
  12. 1 tablespoons - Lemon peel
  13. 2/3 cups - Nuts chopped

Directions:

Mix margarine, brown sugar, lemon juice and corn syrup into a sauce. Whisk sour cream, egg and lemon peel into above.

Add all dry ingredients. Lastly, add dates, nuts and hot water. Put in muffin tin using liners.

Mix 1/3 cup sugar and 1 teaspoon lemon peel; sprinkle over tops. Bake at 400° for 20 minutes.
