Lemon Curd

Ingredients:

  1. 4 - lemons zested and squeezed
  2. 1 3/4 cups - sugar
  3. 1 1/2 cups - butter
  4. 4 - eggs
  5. - clean, warm jars for storage

Directions:

In a heatproof bowl, combine lemon zest and juice; stir in sugar, and cut in the butter.

Set bowl over a saucepan one-quarter filled with simmering water and stir until butter has melted and sugar dissolved.

Strain eggs into lemon mixture. Cook gently, stirring frequently, 10 to 15 minutes until thick and creamy.

Pour into clean, warm jars and seal while hot. Keep refrigerated.
