Lemon Bars

Ingredients:

  1. 2 cups - flour
  2. 1/2 cups - powdered sugar
  3. 1 cups - butter
  4. 4 - eggs
  5. 2 cups - sugar
  6. 6 tablespoons - lemon juice
  7. 1 teaspoons - baking powder
  8. 4 tablespoons - flour
  9. - a pinch of salt
  10. - powdered sugar for topping

Directions:

For Crust:

Mix together flour, powdered sugar and butter with beater until crumbly. Pat into a 9-x-13-inch cake pan and bake for 20 minutes at 350 degrees F.

While this bakes, make the filling:

Combine eggs, sugar, lemon juice, baking powder, flour and salt.

Pour filling into hot crust and bake for 25 minutes.

Sprinkle with powdered sugar and cut into bars. Makes an exceptionally large recipe!
