Lemon Artichoke Chicken

Ingredients:

  1. - pasta cooked and drained
  2. 2 tablespoons - unsalted butter
  3. 1 teaspoons - crushed garlic
  4. 1 tablespoons - flour
  5. 1/3 cups - wine
  6. 1/2 cups - chicken broth
  7. - juice from 1-1/2 lemons
  8. 1 cans - artichoke hearts drained
  9. 2 tablespoons - capers (drained) optional
  10. - salt and pepper to taste
  11. 1 - deli rotisserie chicken chunked

Directions:

Melt butter in a large skillet and saute the garlic. Sprinkle flour into butter, stirring constantly, to make a paste.

Slowly add hot chicken broth, white wine, lemon juice, capers and artichokes. Cook sauce until thickened and slightly reduced.

Add salt and pepper to taste. Add chicken to heat through.

Serve over cooked pasta.
