Layered Southwest Salad

Ingredients:

  1. 6 cups - shredded lettuce
  2. 3 cups - rotisserie chicken, shredded
  3. 2 cups - chopped tomatoes
  4. 2 cups - canned black beans rinsed
  5. 1 cups - sliced red onion
  6. 1 cups - mayonnaise
  7. 1 cups - sour cream
  8. 1/2 cups - salsa
  9. 1 tablespoons - finely chopped cilantro
  10. 2 cups - shredded sharp cheddar cheese
  11. 2 slices - bacon fried and crumbled

Directions:

1. Layer ingredients in 2-quart serving bowl: lettuce, chicken, tomatoes, black beans and onions.

2. In a separate bowl mix mayonnaise, sour cream, salsa and cilantro.

3. Spread dressing mixture over dry ingredients to the edge of the bowl.

4. Top with grated cheese. Chill several hours or overnight.

5. Garnish with more cheese and bacon before serving.
