Laura Bush’s Governor’s Mansion Cowboy Cookies

Ingredients:

  1. 3 cups - all-purpose flour
  2. 1 tablespoons - baking powder
  3. 1 tablespoons - baking soda
  4. 1 tablespoons - ground cinnamon
  5. 1 teaspoons - salt
  6. 1 1/2 cups - (or 3 sticks) butter at room temperature
  7. 1 1/2 cups - granulated sugar
  8. 1 1/2 cups - packed light brown sugar
  9. 3 - eggs
  10. 1 tablespoons - vanilla
  11. 3 cups - semisweet chocolate chips
  12. 3 cups - old-fashioned rolled oats
  13. 2 cups - sweetened flaked coconut
  14. 2 cups - chopped pecans (about 8 oz.)

Directions:

1. Heat oven to 350° F. Mix flour, baking powder, baking soda, cinnamon and salt in a bowl.

2. In an 8-quart bowl, beat butter on medium speed until smooth and creamy, about 1 minute. Gradually beat in sugars; beat to combine, about 2 minutes. Add eggs, one at a time, beating after each. Beat in vanilla.

3. Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans.

4. For each cookie, drop 1/4 cup dough onto ungreased baking sheets, spacing 3 inches apart. Bake in 350 degree oven for 17-20 minutes until edges are lightly browned; rotate sheets halfway through. Remove cookies to wire rack to cool.

Note: For 6 dozen smaller cookies, use 2 tablespoons dough for each cookie, and bake for 15-18 minutes.
