    We found this recipe by Laura Bush in the Dallas paper when W was running for governor. I changed it up just a little bit, including adding the kosher salt on top, which everyone likes. It quickly became Byron's favorite cookie, and I love baking some for the pros at Byron's tournament! I make these cookies and bring them to the Byron Nelson High School Golf Tournaments for the high school players. I also give them out to the pro golfers each year on the first tee at the AT&T Byron Nelson. Everyone loves these!

Ingredients:

  1. 3 cups - flour
  2. 1 tablespoons - baking powder
  3. 1 tablespoons - baking soda
  4. 1 tablespoons - cinnamon
  5. 1 teaspoons - salt
  6. 3 sticks - butter
  7. 1 1/2 cups - white sugar
  8. 1 1/2 cups - packed brown sugar
  9. 3 - eggs
  10. 1 tablespoons - vanilla
  11. 1/4 cups - half-and-half OR milk
  12. 3 cups - semi-sweet or milk chocolate chips
  13. 3 cups - old-fashioned rolled oats
  14. 2 cups - coconut
  15. 2 cups - chopped pecans
  16. - kosher salt

Directions:

Mix together the flour, baking powder, baking soda, cinnamon and salt.

In a separate bowl, mix together the butter, sugars, eggs, vanilla and half-and-half (or milk). Add flour mixture and beat until blended.

Stir in the chocolate chips, oats, coconut and pecans.

Drop by spoonfuls onto a greased cookie sheet. (Sprinkle with kosher salt, if using). Bake at 350 degrees F for 10-12 minutes.

Cool for a couple of minutes and then loosen with a spatula.
