Ingredients:
- 2 - garlic cloves
- 1/4 cups - almond butter
- 4 tablespoons - lemon juice divided
- 6 tablespoons - olive oil divided
- 1 teaspoons - salt
- 1/4 teaspoons - ground black pepper
- 1 pounds - ground lamb shoulder
- 1/2 - medium onion finely chopped
- 1/4 cups - parsley chopped
- 1/2 teaspoons - coriander
- 1/2 teaspoons - cumin
- 1/4 heads - red cabbage thinly sliced
- 1/4 - hothouse cucumber halved lengthwise, thinly sliced
- 2 - radishes
- 4 - pita/flatbread
- - mixed herbs (cilantro/mint)
Directions:
1) Wisk garlic, almond butter, 2 tbsp lemon juice, 2 tbsp olive oil, 2tbsp water until smooth
2) season with salt and pepper
3) With hands mix Lamb, onion, parsley, coriander, cumin, 2 tbsp oil, 1 tsp salt, and 1/2 tsp pepper in large bowl. Form ino 12 3/4" patties
4) Heat dry large skillet (cast iron) cook till brown with pink center (4 min a side)
5) transfer to wire rack (rest 5 minutes)
6) Toss cabbage, cucumber, radishes, and remaining 2 tbsp lemon juice and 2 tbsp oil in medium bowl
7) serve with pita, sauce, and vegetables
