Ingredients:

  1. 3 pounds - shelled and ground walnuts
  2. 2 cups - to 3 cups sugar
  3. 1/3 cups - scalded milk or more, as needed
  4. 1/4 cups - warm water
  5. 2 packages - dry yeast
  6. 1 1/4 cups - milk
  7. 1 cups - sugar
  8. 2/3 cups - shortening
  9. 3 - eggs
  10. 6 1/2 cups - flour
  11. 1 1/2 teaspoons - salt
  12. - one beaten egg mixed with a little water for brushing on dough

Directions:

For nut filling, combine all ingredients, adding more milk as needed so that nuts stick together and spread easily. (You may also use an apricot or poppyseed filling).

For Dough:
Dissolve yeast in warm water.

Add sugar, shortening and eggs to scalded milk. Add yeast mixture to milk mixture when milk mixture is lukewarm.

Sift flour into liquid with salt; knead until smooth and elastic. Cover and let rise until double, about 1 to 2 hours.

Punch dough down and divide into 6-8 balls. Roll each ball into a rectangle; spread to edges with nut mixture. Roll up and place seam side down on parchment covered cookie sheet. Make 4 diagonal slits across the top of each roll to let steam escape.

Let rise one hour more. Just before baking, brush rolls with beaten egg and a tinge of water. Bake at 350 degrees F for 25 minutes.
