King Ranch Chicken

Ingredients:

  1. 1 whole - Rotisserie Chicken Deboned
  2. 1 jars - Cookwell & Co. Cheese Enchilada Soup
  3. 1 pounds - HEB Easy Melt Queso Blanco
  4. 1 packages - Yellow corn tortillas, 10 ct.
  5. 2 cups - Colby Jack cheese
  6. -

Directions:

1. Preheat oven to 375. In a large stock pot add the Enchilada Soup and the Queso Blanco; heat over medium heat until the cheese melts. Add in the chicken meat and stir until combined.

2. Cut tortillas into strips and add to the soup mixture. Pour into a casserole dish. Top w/ Colby Jack cheese.

3. Place dish into the oven and bake fo 25--30 min. or until casserole reaches an internal temperature of at least 165 degrees.
