Killer Antipasta Salad

Ingredients:

  1. 1/4 pounds - Genoa salami sliced thick
  2. 1/4 pounds - cooked ham sliced thick
  3. 1/4 pounds - provolone cheese slices
  4. 15 - cherry tomatoes halved
  5. 8 - peppercini peppers
  6. 1 - red onion sliced thin
  7. 16 ounces - mushrooms sliced
  8. 8 ounces - Italian salad dressing fat-free
  9. 3 teaspoons - Italian seasoning
  10. 15 ounces - black olives drained (optional)
  11. 1 jars - green olives drained (optional)

Directions:

Cut the meat and cheese into bite-size pieces. Combine all ingredients into a gallon size ziplock bag.

Toss to coat and then refrigerate for at least 1 hour; but if you have time, let it marinate overnight.

Periodically toss to distribute the dressing evenly. Serve alone or on a bed of greens.
