    This recipe is very easy to change using different sausages or beans or adding more spice. Try chicken sausage and black beans. Add a bit of corn and some chipotle for a bit of spice. I have used jalapenos in place of the green chilies however I don't recommend doing more than 1 can! I use more or less stock depending on what I have. I have used a package of onion soup in place of the stock. This is as good as the sausage you use which is where much of your flavor comes from. Use a highly seasoned sausage that you like in order to flavor your broth. Great as a camp meal in a Dutch Oven.

Ingredients:

  1. 1 1/2 pounds - kielbasa or smoked sausage or chicken sausage Slice into chunks
  2. 2 cans - Red Beans drain and rinse
  3. 2 cans - Green Chilis diced DO NOT DRAIN
  4. 2 cans - Tomatoes, diced DO NOT DRAIN
  5. 1 cups - onion, diced
  6. 1 cups - Celery, chopped
  7. 8 cups - Beef or chicken stock
  8. 3 cloves - garlic, chopped

Directions:

1. Slice Sausage. (May use chicken sausage) Lightly brown while prepping everything else.
2. Chop onions, celery and garlic. Add to the sausage in pot.
3. Open Beans. Drain and Rinse to remove salt. Put into pot. Stir one time gently
4. Open Green Chilies and Tomatoes. Add to pot using all the liquid also.
5. Cover completely with Stock. May use chicken or beef or veggie broth.
6a. If cooking on top of stove, bring to an easy boil than turn down to low simmer. Cook for up to 30 minutes.
6b. If using a slow cooker, turn on low cooking for 8 hours or on high up to 4 hours.
