Kielbasa and Bean Soup

Ingredients:

  1. 1 1/2 pounds - kielbasa or smoked sausage
  2. 2 cans - red beans rinsed and drained
  3. 2 cans - diced green chilies
  4. 2 cans - diced tomatoes
  5. 1 cups - onion diced
  6. 1 cups - celery chopped
  7. 8 cups - beef or chicken stock
  8. 3 cloves - garlic chopped

Directions:

Slice sausage. Lightly brown in a pot while prepping everything else.

Add chopped onions, celery and garlic to the sausage in the pot.

Add beans to pot and stir one time gently; stir in green chilies and diced tomatoes along with the beef or chicken stock.

If cooking on stove top, bring to an easy boil and then turn down to low heat to simmer; cook for about 30 minutes.

If using a slow cooker, turn on low heat and cook for 8 hours or cook on high heat for 4 hours.
