Keto Coconut Flour Pancakes

Ingredients:

  1. 1/4 cups - Coconut Flour
  2. 1 - Sweetener of choice- I use Pyure or Truvia
  3. 3/4 teaspoons - Aluminum Free Baking Powder
  4. 1/8 teaspoons - Pink Salt
  5. 2 - Large eggs - room temp
  6. 4 ounces - Cream Cheese - room temp
  7. 1/3 cups - Almond Milk -start with 1/4 cup . increase to 1/3 cup if it is too thick)
  8. 1/4 teaspoons - cinnamon
  9. 1/2 teaspoons - Maple Extract (you can sub with Vanilla- if using Vanilla increase to 1 teaspoon)

Directions:

Add all of your ingredients to a blender and blend for 15-20 seconds.
Let your batter rest for 3-4 minutes.
While your batter rests- Preheat griddle to 325 Degrees F (med/low heat)
Spray or grease griddle/pan with butter or coconut oil.
Pour out 6 pancakes and let cook for 3-4 min and flip. Continue to cook for 2-3 more minutes.
Top with your favorite toppings and syrup.
