Ingredients:
- 1/4 cups - Coconut Flour
- 1 tablespoons - Pyure/Truvia or similar sugar sub
- 1 teaspoons - aluminum free baking powder
- 1/8 teaspoons - pink salt
- 2 - large eggs - room temp
- 4 ounces - Full Fat Cream Cheese softened to room temp
- 1/4 cups - Almond Milk- Unsweetened
- 1 teaspoons - Vanilla Extract
- 1/3 cups - fresh blueberries (if using frozen- thaw before use)
Directions:
Add all of your ingredients to the blender except your blueberries. Blend for 15 -20 seconds on high. Let your batter rest for 2-3 minutes to thicken.
Add your blueberries and blend for only 3-5 seconds. Do not over blend! You want big chunks of blueberries in your pancakes.
Let your batter rest again for 2-3 minutes.
While your batter is resting. pre-heat (325 degrees F) and grease your griddle. when your pan is up to temp, pour out 3 pancakes at a time, cooking in 2 batches. They will be ready to flip when the edges are dry and there are bubbles forming toward the center of the pancake.
Top with your favorite syrups, berries or homemade whipped cream! enjoy!
