Ingredients:

  1. 4 1/2 tablespoons - butter melted and cooled
  2. 1/3 cups - coconut flour
  3. 2 tablespoons - sour cream
  4. 4 - eggs
  5. 1/4 teaspoons - salt
  6. 1/4 teaspoons - baking powder
  7. 1 1/3 cups - sharp cheddar cheese shredded

Directions:

Preheat oven to 400 degrees
Grease muffin pan
Combine melted (and cooled) butter, eggs, salt, and sour cream and whisk.
Add coconut flour and baking powder and stir until combined.
Stir in cheese.
Drop into 12 greased muffin tins.
Bake for 15 minutes or until tops slightly brown.
