Kelly's Salmon Recipe

Ingredients:

  1. 4 - salmon steaks (6 oz. each)
  2. 2 1/2 tablespoons - fresh lime juice
  3. 1/2 cups - butter (1/2 cup = 1 stick)
  4. 2 cloves - garlic minced
  5. 1 cups - fresh cilantro finely chopped
  6. 1/2 teaspoons - dried red pepper flakes
  7. 1/4 teaspoons - red pepper

Directions:

Place salmon in non-aluminum dish. Pour lime juice over. Marinate overnight.

Prepare grill for medium heat.

Melt butter in a heavy small saucepan over medium heat. Add garlic and cook 30 seconds. Mix in cilantro and pepper and cook until cilantro is heated through, about 1 minute.

Grill salmon, basting frequently with cilantro butter. Serve with remaining cilantro butter.
