Andi Hotes’ Kale, Cheese and French Baguette Strada

Ingredients:

  1. - 9 Eggs
  2. cups - 2 & 1/2 Milk
  3. 1 loaves - French Baguette
  4. 1 bags - Kale, chopped
  5. 1/2 - onion, diced
  6. 1 bags - Trader Joe’s shredded cheese (asiago/parm mix)
  7. - Olive oil
  8. - pepper, parsley for serving

Directions:

Preheat oven to 325. Slice the bread and grease 9X13 pyrex dish. In medium pan, cook the onions and kale in olive oil over low heat until just wilted: 2-3 minutes.
In pan, lay out slices of baguette (day old is best) to cover baking dish. Cover with a layer of kale/onion mixture, then a layer of cheese. Repeat. Mix the eggs and milk, pour over the dish. Cover with foil. Refrigerate at least one hour or overnight.
1 hour prior to serving, bake for 45 minutes at 325, then remove foil and bake uncovered until cheese browns slightly, about 15-20 minutes. Remove from oven and let cool 10 minutes. Slice and serve with parsley, fresh ground pepper or other fresh herbs. DELICIOUS - ENJOY!!!!
