Kale and Currant Salad with Pears and Walnuts

Ingredients:

  1. 1 bunches - dinosaur kale ribs removed, sliced thin
  2. 1/2 cups - currants
  3. 1/2 cups - walnuts chopped
  4. 1/2 - Meyer lemon juiced
  5. 1 - pear cored, sliced
  6. 1 tablespoons - olive oil
  7. - salt and pepper to taste

Directions:

Whisk together the lemon juice and olive oil.

Mix together kale and vinaigrette, then season with salt and pepper.

Plate greens and top with pears, walnuts and currants.
