Kahlua Fantasy Chocolate Cheesecake

Ingredients:

  1. 1 1/3 cups - chocolate wafer crumbs
  2. 1/4 cups - softened butter
  3. 1 tablespoons - granulated sugar
  4. 1 1/2 cups - semi-sweet chocolate pieces
  5. 1/4 cups - Kahlua
  6. 2 tablespoons - butter
  7. 2 - large eggs beaten
  8. 1/3 cups - granulated sugar
  9. 1/4 teaspoons - salt
  10. 1 cups - sour cream
  11. 2 packages - 8 oz. cream cheese softened, cut into pieces
  12. - whipped cream and chocolate leaves optional, for garnish

Directions:

Chocolate Crumb Crust:

Combine wafer crumbs, butter and sugar. Press firmly into bottom of 9-inch springform pan.

Cheesecake:

Preheat oven to 350 degrees F. In a small saucepan, over medium heat, melt chocolate with Kahlua and butter; stir until smooth. Set aside.

In a bowl, combine eggs, sugar and salt. Add sour cream; blend well. Add cream cheese to egg mixture; beat until smooth. Gradually blend in chocolate mixture. Turn into prepared crust.

Bake 40 minutes or until filling is barely set in center. Remove from oven and let stand at room temperature for 1 hour. Then refrigerate several hours or overnight.

Garnish with whipped cream and chocolate leaves, if desired.
