Notes:
You may need to wear a mask while preparing this as fumes are quite strong. Use sparingly as a condiment, it's quite hot. This can be stored at room temperature.

Ingredients:
- 36 - Habanero Peppers Stems removed
- 2 tablespoons - Cilantro Chopped fine
- 4 teaspoons - Sea Salt
- 3/4 cups - Distilled White Vinegar
Directions:
Combine peppers, cilantro and salt in blender or food processor and process till quite smooth. Place in a clean glass jar, cover with coffee filter or paper towel held on with a rubber-band, let sit at room temperature for 24 hours. On day 2 add the vinegar. If possible, use a high powered blender when mixing in the vinegar as this will give a smoother consistency to the sauce.
