Jimmerson's Meat Loaf and Sauce

Ingredients:

  1. 1/3 cups - oatmeal
  2. 1 cans - 6 oz. tomato juice
  3. 1 1/2 pounds - ground beef
  4. 2 - eggs
  5. 1/2 cups - yellow onion diced finely
  6. 2 tablespoons - A-1 sauce
  7. 1 tablespoons - Worcestershire sauce
  8. 2 teaspoons - Tabasco sauce
  9. 1 1/2 teaspoons - salt
  10. 1 teaspoons - black pepper
  11. 3 tablespoons - vegetable oil
  12. 1/2 cups - yellow onion diced finely
  13. 2 tablespoons - flour
  14. 1 cans - 12 oz. diced tomatoes
  15. 1 cups - water
  16. 1/4 cups - catsup
  17. 1 teaspoons - vinegar
  18. 1/2 teaspoons - chili powder
  19. 1/2 teaspoons - black pepper
  20. 1/4 teaspoons - salt

Directions:

For Meat Loaf:

Soak the oatmeal in the tomato juice for 3 minutes. Combine the remaining ingredients by hand and mix well. Mold into a ring shape in a large cast iron skillet. Bake at 350 degrees F until brown, about 45-60 minutes. Top with sauce (below).

For Sauce:

Heat the vegetable oil. Add the onion and saute until transparent. Add the flour and lightly brown. Add the remaining sauce ingredients and bring to a simmer until the tomatoes are tender. Baste the cooked meatloaf and serve.
