Recipe calls for a tube pan...I think it looks better and is easier to serve with a bunt pan.

Ingredients:
- 3 cups - All purpose flour
- 1 teaspoons - Baking powder
- 1 teaspoons - Baking soda
- 1 teaspoons - Ground cinnamon
- 1/4 teaspoons - Ground allspice
- 1 cups - Sugar
- 1 cups - Brown sugar packed
- 1 cups - Coconut oil
- 2 - Eggs beaten
- 1 tablespoons - Vanilla
- 3 cups - Apples peeled and chopped
- 1 cups - Pecans chopped and toasted
- 2 teaspoons - Lemon peel finely shredded
- - Powdered sugar sifted
Directions:
Preheat oven to 350 degrees
Grease and lightly flour a 10 inch tub pan. Set aside.
Stir together flour, baking powder, baking soda , cinnamon, allspice, and salt. Set aside.
In a mixing bowl combine sugar, brown sugar, oil and eggs and vanilla. Beat with an electric mixer on medium speed for 2 minutes. Add dry mixture and beat on low speed just till combined. Fold in apples, pecans and lemon peel.
Pour Batter into the prepared pan. Bake in oven at 350 degrees for about 1 hour or until toothpick test comes out clean.
Cool cake on wire rack for about 10 minutes. Remove from pan and cool thoroughly on wire rack. When cooled, sprinkle with powered sugar, cover and store in refrigerator.
