Japanese Coleslaw

Ingredients:

  1. 1 - head of cabbage thinly slice
  2. 1/2 cups - slivered almonds toast stovetop or bake on cookie sheet at 400 for 5 minutes
  3. 1/2 cups - unsalted sunflower seeds toast stovetop or bake on cookie sheet at 400 for 5 minutes
  4. 8 - scallions finely slice
  5. 2 packages - ramen noodles discard the seasoning and break the noodles with your hands
  6. 4 tablespoons - sugar
  7. 1 tablespoons - salt
  8. 1 tablespoons - pepper
  9. 3/4 cups - no taste oil
  10. 1/2 cups - rice wine vinegar or apple cider vinegar

Directions:

Mix the thinly sliced cabbage with the cooled nuts and seeds, scallions and broken ramen noodles.
About 30 minutes before serving make the dressing whisking together the salt, sugar, pepper, oil and vinegar. Pour it over the cabbage mixture and let it rest for 30 minutes so everything softens and blends.
