Jamaican Spiced Chicken Thighs

Ingredients:

  1. 1 tablespoons - sugar
  2. 1/4 cups - red onion minced
  3. 1 tablespoons - finely chopped seeded jalapeno pepper
  4. 2 teaspoons - cider vinegar
  5. 2 teaspoons - low-sodium soy sauce
  6. 1/2 teaspoons - salt
  7. 1/2 teaspoons - ground all-spice
  8. 1/2 teaspoons - dried thyme
  9. 1/2 teaspoons - black pepper
  10. 1/4 teaspoons - ground red pepper
  11. 8 - skinless boneless chicken thighs

Directions:

Combine first 10 ingredients in a large bowl; add chicken, tossing to coat. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add chicken to pan; cook 4 minutes. Turn chicken over; cook 6 minutes or until done.
