This is a very moist recipe and delicious! (If you like a dryer, more cake-like, less moist texture, then subbing evap milk would be fine, but not as good in my opinion - just a note.) Also, this is easily doubled. Adjust amount of jalapenos according to how spicy you like it (or for your kids :). All of my kids like it except one who thinks salt is spicy. ; )

Ingredients:
- 2 - Eggs
- 1 cans - Small can Cream Corn
- 1 cups - Milk
- 1 cups - Yellow Cornmeal
- 1/4 cups - Oil
- 2 - Jalapenos finely chopped
- 1 - medium Onion finely chopped
- 1/2 teaspoons - Garlic Salt
- 1/2 teaspoons - Baking Soda
- 3/4 teaspoons - Salt
- 1 cups - Cheddar Cheese - shredded
Directions:
Heat oven to 350°. Mix all ingredients together and pour in greased pan. Bake for 45 min.
