Jack's Holiday Stuffing

Ingredients:

  1. 1 pounds - bacon
  2. 2 - to 3 onions
  3. 1 bunches - celery
  4. 3 sticks - butter
  5. - oil
  6. - soy sauce
  7. 18 ounces - seasoned corn bread stuffing - I use 1-1/2 boxes of Mrs. Cubbisons
  8. 2 cups - chicken broth - if I don't have any from cooking, I use canned 15 oz. chicken broth

Directions:

Fry the bacon until it's crisp.

Cut the onions and celery to desired size and then sauté them until soft in the bacon grease or oil with a little bit of soy sauce added.

Melt the butter; set aside.

In a large bowl, combine the bread crumbs, celery, onions, chicken broth and melted butter. Crumble the bacon on top and add some bacon grease for added flavor, if desired (Dad adds 5-6 tablespoons). Stir thoroughly, but do not mash.

Put in a large greased baking dish and cover with aluminum foil. Cook for about 30-40 minutes at 350 degrees. Uncover for last 5 minutes for a crisp top.
