Italian Summer Squash

  1. 2 pounds - zucchini and yellow squash sliced
  2. 1 - small onion sliced
  3. 1 - small tomato chopped
  4. 2 tablespoons - butter
  5. 1/2 teaspoons - Italian seasoning
  6. - salt and pepper to taste
  7. 1 cups - mozzarella cheese grated


Saute squash, onion, and tomato in butter for 5 minutes. Add Italian seasoning, salt, and pepper. Cover and simmer until squash is tender. Sprinkle with grated mozzarella cheese. Return lid and remove from heat. Allow cheese to melt and serve.
