Notes:
To make dressing yourself, combine 1/2 cup olive oil or salad oil with 1/4 cup wine vinegar, 2 cloves minced garlic, 2 teaspoons crushed dried basil, 1 teaspoon crushed dried oregano, and 1/2 teaspoon pepper; cover and shake well to combine. Other ingredients can be prepped while the noodles are cooking; all done about the same time, then toss and put in the fridge. Super easy.

Ingredients:
- 7 ounces - corkscrew macaroni or tortellini
 - 1 1/2 cups - cubed Swiss or provolone cheese
 - 6 ounces - sliced salami or Turkey pepperoni cut into strips
 - 1 cups - cauliflower florets thinly sliced
 - 1 cups - zucchini thinly sliced
 - 1/2 - red onion (optional) sliced thinly
 - 1/2 cups - green or red pepper chopped
 - 1/2 cups - ripe olives sliced, pitted
 - 1/4 cups - grated parmesan cheese
 - 1/4 cups - snipped parsley
 - 1 bottles - Italian salad dressing
 - 2 - medium tomatoes (or 1/2 cup of whole grape tomatoes) cut into wedges
 
Directions:
Cook pasta according to package directions. Drain pasta; rinse with cold water and drain again.
In a bowl toss together pasta, cubed cheese, salami or pepperoni, cauliflower, zucchini, peppers, onion, olives, Parmesan cheese & parsley.
Pour Italian salad dressing (to taste) over all to coat and toss well.
Cover; chill 4 to 24 hours. To serve, add tomatoes; toss gently.
