Italian Sausage Sub Sandwiches

Ingredients:

  1. 5 - Sub Rolls
  2. 4 tablespoons - Extra Virgin Olive Oil
  3. 1 - Red Onion Diced
  4. 2 - Red Bell Peppers Diced
  5. 2 - Yellow Bell Peppers Diced
  6. 1 teaspoons - Red Chili Flakes
  7. 1/2 teaspoons - Dried Thyme
  8. 2 tablespoons - Tomato Paste
  9. 1/2 cups - Dry Red Wine
  10. 1 pounds - Sweet Italian Sausages (Johnsonville 5 pkg)
  11. 1/2 cups - Grated Parmesan
  12. 1/2 pounds - Grated Mozzarella

Directions:

Saute onion, peppers, chili flakes, and thyme over medium heat until soft.

Add tomato paste and wind and bring to a boil.

Add sausages and reduce to simmer, cooking sausages through (about 10 min per side) (don't let them burn too much; must flip occasionally)

Preheat oven to 350

In a roll, add sausage, pepper mix, and top with cheese. Individually wrap loosely in foil.

Bake for 40 minutes
