Italian Sausage and Potato Roast

Ingredients:

  1. 1 - small yellow bell pepper seeded, cut into strips
  2. 1 - small green bell pepper seeded, cut into strips
  3. 1/2 - sweet onion, such as Vidalia sliced
  4. 3/4 pounds - red potatoes cut into quarters
  5. 1 tablespoons - olive oil
  6. 1/4 teaspoons - dried oregano
  7. 1 teaspoons - garlic salt
  8. - pepper
  9. 1 pounds - Italian sausage about 4 links, cut into chunks

Directions:

Preheat oven to 450° F. Line a large baking sheet with foil and mist foil with cooking spray.

In a large bowl, toss peppers, onion and potatoes with olive oil, oregano, garlic salt and pepper. Spread vegetables on baking sheet.

Distribute sausage chunks among vegetables. Roast until veggies begin to caramelize and sausages are cooked through, about 30 minutes, stirring once or twice during baking. Serve hot.
