Ingredients:
- 1 tablespoons - Olive Oil
- 1/4 cups - Fresh parsley
- 2 - Garlic cloves
- 1 teaspoons - Dried basil
- 1 teaspoons - Dried oregano
- 1 teaspoons - Salt
- 1/2 teaspoons - Pepper
- 1/4 cups - Fresh Parmesan Cheese
- 1/2 packages - Whole WheatLinguine Pasta
- 2 - Medium tomatoes
- 1 - Medium onion
- 1 - Medium zucchini
Directions:
1. Cook linguine according to package. Drain and keep warm.
Chop tomatoes and onions. Slice zucchini.
2. Heat oil in skillet over medium heat until hot. Press garlic into oil and stir for 15 seconds. Add zucchini and onions, stir-fry 2-3 minutes or until the vegetables are crisp-tender. Add tomatoes, parsley and seasonings.
3. Heat for 1-2 minutes, stirring gently until heated through. Remove from heat. Stir in linguine. Grate Parmesan cheese over pasta. Serve immediately.
