Italian Pasta Stir-Fry

Ingredients:

  1. 8 - Linguine Pasta (uncooked)
  2. 2 - Medium tomatoes seeded and chopped
  3. 1 - Medium onion chopped
  4. 1 - Medium zucchini sliced
  5. 1 tablespoons - Olive Oil
  6. 1/4 cups - Fresh parsley chopped
  7. 2 - Garlic cloves pressed
  8. 1 teaspoons - Dried basil
  9. 1 teaspoons - Dried oregano
  10. 1 teaspoons - Salt
  11. 1/2 teaspoons - Pepper
  12. 1/4 cups - Fresh Parmesan Cheese grated

Directions:

1. Cook linguine according to package. Drain and keep warm.
Chop tomatoes and onions. Slice zucchini.

2. Heat oil in skillet over medium heat until hot. Press garlic into oil and stir for 15 seconds. Add zucchini and onions, stir-fry 2-3 minutes or until the vegetables are crisp-tender. Add tomatoes, parsley and seasonings.

3. Heat for 1-2 minutes, stirring gently until heated through. Remove from heat. Stir in linguine. Grate Parmesan cheese over pasta. Serve immediately.
