Italian Pasta Sauce - Giada

Ingredients:

  1. 1/2 cups - extra virgin olive oil
  2. 2 - small onions finely chopped
  3. 2 cloves - garlic finely chopped
  4. 2 stalks - celery finely chopped
  5. 2 - carrots peeled, finely chopped
  6. 1/2 teaspoons - sea salt
  7. 1/2 teaspoons - freshly ground black pepper
  8. 2 cans - crushed tomatoes 32 oz. each
  9. 2 - dried bay leaves

Directions:

Heat the oil over a medium-high flame.

Add the onions & garlic & sauté until the onions are translucent, about 10 minutes.

Add the celery and carrots.

Add 1/2 teaspoon of each salt and pepper.

Sauté until all the vegetables are soft, about 10 minutes.

Add the tomatoes and bay leaves.

Simmer uncovered over low heat until the sauce thickens, about 1 hour.

Remove and discard the bay leaf.

Season the sauce with more salt and pepper, to taste.
