Italian Pasta Bake

Ingredients:

  1. 1 pounds - ground beef
  2. 1/2 - green pepper chopped
  3. 4 ounces - fresh mushrooms chopped
  4. 1/2 - large onion chopped
  5. 2 cloves - garlic minced
  6. 1 jars - (24 ounces) spaghetti sauce
  7. 1 cans - (14-1/2 ounces) diced tomatoes
  8. 1 teaspoons - Italian seasoning
  9. 2 cups - uncooked medium pasta shells or penne pasta
  10. 3/4 cups - shredded part-skim mozzarella cheese

Directions:

In a large skillet, cook beef, green pepper and onion over medium heat until beef is no longer pink. Add garlic and mushrooms; cook 3 minutes longer. Drain.

Stir in spaghetti sauce, diced tomatoes, and Italian seasoning. Bring to a boil. Reduce heat; simmer, uncovered, 15 minutes.

Meanwhile, preheat oven to 350°F. Cook pasta according to package directions; drain. Add to beef mixture.

Transfer to an ungreased 2-quart baking dish. Sprinkle with cheese.

Cover and bake 20-25 minutes or until bubbly and heated through.
