Italian Flatbread

Ingredients:

  1. 2 cups - baking mix
  2. 1/2 cups - hot water
  3. 2 tablespoons - butter or margarine melted
  4. 1 cups - monterey jack cheese shredded
  5. 1/4 cups - grated parmesan cheese
  6. 2 teaspoons - parsley flakes
  7. 1/2 teaspoons - Italian seasoning

Directions:

Preheat oven to 450° F. Add hot water to baking mix and mix until stiff dough forms. Let stand for 10 minutes. Turn dough onto a generously floured surface; gently roll dough in flour to coat. Shape into ball; knead 60 times. (Or add flour to dough in bowl, roll into ball shape and knead in bowl).
Pat dough into 11-inch square on ungreased cookie sheet. Spread melted butter on dough. Mix remaining ingredients; sprinkle over dough.
Bake 10 to 12 minutes or until edges are light golden brown. Cut with a pizza cutter and serve.
Refrigerate any leftovers.
