Italian Christmas Cookies

Ingredients:

  1. 2 cups - sugar
  2. 3 - eggs
  3. 15 ounces - ricotta cheese
  4. 2 teaspoons - vanilla extract
  5. 1 cups - butter (No substitutes) softened
  6. 4 cups - flour
  7. 1 teaspoons - salt
  8. 1 teaspoons - baking soda
  9. 1/4 cups - butter (No substitutes) softened
  10. 3 cups - to 4 cups confectioners' sugar
  11. 1/2 teaspoons - vanilla extract
  12. 3 tablespoons - to 4 Tbsp. milk
  13. - colored sprinkles for decorating

Directions:

In a mixing bowl, cream butter and sugar together. Add eggs, one at a time, beating well after each addition. Beat in ricotta and vanilla.

Combine flour, salt and baking soda; gradually add to creamed mixture.

Drop by rounded teaspoonfuls or roll into balls and place 2 inches apart onto greased baking sheets. Bake at 350 degrees F for 10-12 minutes or until lightly browned on bottom.

Remove to wire racks to cool.

For Frosting:
In a mixing bowl, cream butter, sugar and vanilla. Add enough milk until frosting reaches spreading consistency.

Frost cooled cookies and immediately decorate with sprinkles.

Store in the refrigerator.
