Italian Asparagus Salad

Ingredients:

  1. 1 1/2 pounds - Fresh asparagus
  2. 1 tablespoons - Olive oil
  3. 1 tablespoons - Balsamic vinegar
  4. 1/2 teaspoons - Salt
  5. 1/4 teaspoons - Black pepper
  6. 2 tablespoons - Parmesan cheese Grated

Directions:

1. Trim woody ends from asparagus. Peel each spear. Blanch in boiling water for 3 min., drain and run under cold water. Blot dry.
2. Top with olive oil and balsamic vinegar. Season with salt, pepper and grated Parmesan.
3. Serve immediately
