Islander Cheese Ball

Ingredients:

  1. 1 pounds - softened cream cheese
  2. 1 cans - 8 oz. crushed pineapple drained
  3. 1/4 cups - to 1/2 cup chopped green pepper
  4. 2 tablespoons - chopped scallions including green tops
  5. 2 teaspoons - seasoned salt
  6. 2 cups - chopped pecans

Directions:

Mix the cream cheese and pineapple using an electric mixer. Stir in the green pepper, scallions, salt and 1/2 cup of the pecans.

Roll into a large ball or two logs (or alternatively, fill a scooped-out pineapple half).

Top with the remaining 1-1/2 cups of pecans. Chill.
