Irish Lemon Curd

Ingredients:

  1. 3 cups - sugar
  2. 1/2 cups - cornstarch
  3. 1/8 teaspoons - salt
  4. 3 cups - cold water
  5. 3/4 cups - fresh lemon juice
  6. 8 - large egg yolks beaten to blend
  7. 4 teaspoons - grated lemon peel
  8. 1/4 cups - (1/2 stick) butter

Directions:

Combine sugar, cornstarch and salt in heavy saucepan. Gradually mix in water. Add lemon juice, yolks and lemon peel.

Bring to a simmer over medium heat, stirring constantly. Boil 1 minute.

Remove from heat, add butter and mix until melted. Cool completely without stirring.

Cover and refrigerate. Spoon into tarts to serve.
