Irish Creme Cheesecake

Ingredients:

  1. 1 cups - crushed graham crackers (regular or chocolate)
  2. 1/4 cups - sugar
  3. 1/4 cups - melted butter
  4. 2 packages - 8 oz. cream cheese softened
  5. 1 - egg
  6. 1/2 cups - sugar
  7. 1 cups - flavored coffee cream (Irish creme or other flavor)
  8. - chopped Andes mints for garnish

Directions:

Mix together crust ingredients and pat in bottom and up sides of 8" or 9" springform pan.

Combine cream cheese, egg, sugar, and coffee cream in a food processor and blend well. Pour into springform pan over unbaked graham crust.

Bake 30 minutes at 375 degrees F. Cool for 3 to 4 hours or overnight. Garnish with chopped Andes mints.
