Instant Pot Wild Rice Soup

Ingredients:

  1. 3 - Chicken Breasts Cooked & Shredded
  2. 5 - Carrots Chopped
  3. 5 stalks - Celery Chopped
  4. 1/2 - Onion Chopped
  5. 3 cloves - Garlic Minced
  6. 1 cups - Wild Rice Uncooked
  7. 1 cups - White or Brown Rice Uncooked
  8. 8 ounces - Mushrooms Sliced
  9. 8 cups - Vegetable or Chicken Stock
  10. 1 teaspoons - Salt
  11. 1 teaspoons - Poultry Seasoning
  12. 1/2 teaspoons - Thyme
  13. 6 tablespoons - Butter
  14. 1/2 cups - Flour
  15. 1 1/2 cups - 2% Milk

Directions:

Put all but the last 3 ingredients in the Instant Pot. Cook for 45 minutes on manual setting. Release steam.

When soup is done, melt the butter in a saucepan. Whisk in the flour. Let the mixture cook for a minute. Whisk in milk, a little at a time, until a smooth, thickened sauce has formed. Throw a little salt in too.

Mix the creamy sauce with the soup in the instant pot.
