Instant Pot Tuscan Chicken Pasta

Ingredients:

  1. 4 cups - chicken broth
  2. 1/2 cups - roasted red peppers diced
  3. 2 teaspoons - Pampered Chef Italian Seasoning
  4. 1/4 teaspoons - each salt and pepper
  5. 2 cloves - (or 3) garlic minced
  6. 1 pounds - boneless, skinless chicken breasts cubed
  7. 1 pounds - uncooked penne pasta
  8. 5 ounces - fresh baby spinach (OR one pkg frozen spinach, thawed and drained)
  9. 8 ounces - light cream cheese
  10. 3/4 cups - freshly grated Romano cheese
  11. 1/4 cups - freshly grated Parmesan cheese
  12. - squeeze of lemon juice optional
  13. 1/4 cups - chopped fresh basil optional, for serving

Directions:

1. Add broth, peppers, Italian seasoning, garlic, salt, and pepper into the instant pot. Stir to combine. Stir in chicken and uncooked pasta (try to submerge in broth).

2. Secure the lid in place, set the pressure valve to “sealing”, and cook on high pressure for 5 minutes. When the time is up, quick release the pot and let out the steam.

3. Stir noodles and chicken to separate. Add cream cheese, Parmesan, Romano, and spinach. Add a squeeze of lemon juice and chopped basil to the top, if desired.
