You may need to separate each dumpling with a spoon before serving; they tend to stick together during cooking.

Ingredients:
- 1 pounds - boneless, skinless chicken thighs or breasts diced into 1-inch pieces
- 1 tablespoons - olive oil
- 2 - large carrots chopped
- 2 stalks - celery chopped
- 1/2 - onion chopped
- 2 cloves - garlic minced
- 4 cups - chicken broth
- 1 tablespoons - Pampered Chef Rosemary Mix
- 1 teaspoons - each of salt and pepper
- 1 packages - Pillsbury Biscuits (we use Original Flaky)
Directions:
1. Set pot to saute, and add oil. When oil is heated, saute carrots, celery, onion, and garlic for 5 minutes. Add chicken, chicken broth and seasonings to pot and cook with vegetables for 3 more minutes.
2. Cut each biscuit like a pizza,into 8 pieces, and drop each piece into the pot. Stir until incorporated.
3. Close lid and set pot to pressure cook at high pressure for 7 minutes. After cook time is finished, naturally release for 10 minutes, and then quick release. Open lid when steam is evaporated.
