Ingredients:

  1. 1 pounds - boneless, skinless chicken thighs or breasts diced into 1-inch pieces
  2. 1 tablespoons - olive oil
  3. 2 - large carrots chopped
  4. 2 stalks - celery chopped
  5. 1/2 - onion chopped
  6. 2 cloves - garlic minced
  7. 4 cups - chicken broth
  8. 1 tablespoons - Pampered Chef Rosemary Mix
  9. 1 teaspoons - each of salt and pepper
  10. 1 packages - Pillsbury Biscuits (we use Original Flaky)

Directions:

1. Set pot to saute, and add oil. When oil is heated, saute carrots, celery, onion, and garlic for 5 minutes. Add chicken, chicken broth and seasonings to pot and cook with vegetables for 3 more minutes.

2. Cut each biscuit like a pizza,into 8 pieces, and drop each piece into the pot. Stir until incorporated.

3. Close lid and set pot to pressure cook at high pressure for 7 minutes. After cook time is finished, naturally release for 10 minutes, and then quick release. Open lid when steam is evaporated.
