Indian Chickpea Dip

Ingredients:

  1. 15 ounces - canned reduced-sodium chickpeas rinsed and drained
  2. 1/2 cups - light sour cream
  3. 1/4 cups - apricot chutney or jam
  4. 1/4 cups - yellow mustard
  5. 2 teaspoons - curry powder
  6. 1/4 teaspoons - salt
  7. 1/4 cups - minced cilantro

Directions:

Blend beans, sour cream, jam, mustard, curry and salt in a food processor until smooth; stir in cilantro.

Serve with crackers or cut up vegetables.
