Icy Tropical Grape Skewers

Ingredients:

  1. 1/2 cups - flaked coconut
  2. 1 cans - 20 oz. pineapple chunks juice set aside
  3. 1 1/2 cups - red or green grapes
  4. 16 - 5-6 inch wooden skewers

Directions:

Preheat oven to 350 degrees F. To toast coconut, spread in single layer on baking pan. Bake for about 5 minutes, stirring frequently, until evenly brown. Watch carefully because coconut burns easily. Remove from pan and allow to cool.

Place toasted coconut on a dinner plate.

Pour reserved pineapple juice into a pie pan.

Thread pineapple chunks and grapes alternately on skewers. Roll in juice, then coconut. Arrange kabobs on baking pan, cover with foil and freeze.

To serve, remove from freezer and thaw for about 3 minutes. Serve immediately.
